Tender carrots simmered with butter, sugar, and a touch of salt for a simple, sweet, and comforting side dish.
10 raw carrots, chopped
1/4 C butter (ghee or coconut oil)
1/2 C sugar (sucanat, coconut or maple syrup) add more for desired sweetness
1/2 tsp salt
1/2 C water
Clean and skin the carrots. Chop carrots 1/2” thick.
Put into a pot and add the rest of the ingredients. Cover with a lid and cook on the stovetop until carrots are tender. Approximately 30 minutes.
Serve and enjoy.
