Curry Tuna Casserole

    • 1 cup peas

    • 4 cups cooked brown rice (slightly dry, not mushy)

    • 1 onion (diced)

    • 5 cloves garlic (minced)

    • ¼ cup Chosen mayo

    • ¼ cup Einkorn flour

    • 15 oz container dairy-free sour cream

    • 1 cup almond milk

    • 3 tsp curry powder

    • ¼ tsp spicy curry powder

    • ½ tsp salt

    • Few splashes lemon juice

    Directions

    1. Cook rice and set aside. (Tip: use an Instant Pot; rice should be on the dry side for this recipe.)

    2. Dice onion and garlic, then sauté until translucent. Stir in peas during the last few minutes.

    3. Flake tuna in a bowl, mix with mayo, and set aside.

    4. Prepare curry sauce: In a saucepan, melt butter. Whisk in flour to form a roux. Slowly add almond milk, then sour cream. Stir in curry powders, salt, and lemon juice. Simmer until thick and creamy.

    5. In a large bowl, combine rice, tuna mixture, sautéed veggies, and curry sauce. Mix until well incorporated.

    6. Transfer to casserole dish. Top with cheese if desired.

    7. Bake at 350°F for 30 minutes, until hot and bubbly.
