1 cup peas
4 cups cooked brown rice (slightly dry, not mushy)
1 onion (diced)
5 cloves garlic (minced)
¼ cup Chosen mayo
½ cup butter (1 stick)
¼ cup Einkorn flour
15 oz container dairy-free sour cream
1 cup almond milk
3 tsp curry powder
¼ tsp spicy curry powder
½ tsp salt

Flake tuna in a bowl, mix with mayo, and set aside.
Prepare curry sauce: In a saucepan, melt butter. Whisk in flour to form a roux. Slowly add almond milk, then sour cream. Stir in curry powders, salt, and lemon juice. Simmer until thick and creamy.
In a large bowl, combine rice, tuna mixture, sautéed veggies, and curry sauce. Mix until well incorporated.
Transfer to casserole dish. Top with cheese if desired.
