20 oz fresh spinach (or frozen, thawed and squeezed dry)
6 eggs, whisked
1 cup cheese (raw cheddar, mozzarella, farmer’s cheese, or dairy-free alternative)
1 cup dairy-free Parmesan (or pecorino/manchego)
4 garlic cloves, minced
4 tsp oregano
2 tsp garlic powder
2 tsp salt
2 cups almond flour
4 Tbsp flaxseed meal
Preheat oven to 350°F. Line a baking sheet with parchment paper.
In a large bowl, combine all ingredients and mix thoroughly.
Shape mixture into balls and place on prepared baking sheet.
Bake for 20–25 minutes, until firm to the touch and lightly golden.
Serve warm as an appetizer, snack, or side dish.
