Soft and chewy pumpkin carob chip cookies made with almond butter, coconut sugar, and warm spices. A gluten-free, dairy-free, and refined sugar-free treat perfect for fall or anytime you crave a healthier cookie!
1/4 C pumpkin
1 C almond butter
1 egg
1 C coconut sugar (or honey/maple syrup)
1 tsp baking soda
1 tsp vanilla
1 tsp chia (ground)
1 tsp flax (ground)
Dash of Himalayan sea salt
1/2 C carob chips
1/2 C GF baking flour
Line a pan with parchment paper and preheat oven to 350.
Mix everything together except the carob chips. Once mixed well add the carobs. Scoop Tbsp size dough and arrange 2 inches apart on the lined pan, flatten the tops with fingers.
Cook for 10-12 minutes. Cool then transfer to racks.
