Oat Flour Pancakes

Ingredients

    • 2 cups oat flour

    • 2 Tbsp coconut oil (melted)

    • ½ cup sourdough starter, sour cream, or yogurt

    • 1 cup oat milk or almond milk (add more if too thick)

    • 2 large eggs

    • 3 Tbsp pure maple syrup

    • 1 ½ tsp vanilla extract

    • ¼ tsp cinnamon

    • 1 Tbsp baking powder

    • ½ tsp salt

    • Optional: ½ cup mix-ins (nuts, chocolate chips, fruit, etc.)

    Directions

    1. In a mixing bowl, whisk together oat flour, baking powder, salt, and cinnamon.

    2. In another bowl, combine eggs, sourdough starter/yogurt, milk, maple syrup, vanilla, and melted coconut oil.

    3. Mix wet ingredients into dry until just combined (do not overmix). Batter should be thick—add more milk if needed.

    4. Fold in optional mix-ins if using.

    5. Pour batter onto hot greased griddle or skillet. Cook until bubbles form on surface and edges are set, then flip and cook until golden brown.

    6. Serve warm with maple syrup or toppings of choice.
