An easy one-pan dinner featuring tender lemon pepper chicken, crispy baby potatoes, and roasted asparagus—flavorful, healthy, and ready in under an hour.
2 lbs chicken breasts or thighs (cubed)
2 Tbsp olive oil (divided)
1–2 Tbsp lemon pepper seasoning (Kinder’s Organic Cracked Pepper & Lemon recommended)
1 lb baby potatoes (halved)
1 bunch asparagus
½ tsp garlic powder
½ tsp onion powder
1 tsp dried parsley
Salt (to taste)
Preheat oven to 425°F.
In a mixing bowl, combine chicken, 1 Tbsp olive oil, and lemon pepper seasoning. Mix well to coat. Set aside for 15–20 minutes.
On a lined sheet pan, spread potatoes. Drizzle with 1 Tbsp olive oil, season with garlic powder, onion powder, parsley, and salt. Roast for 20 minutes, until tender.
Remove potatoes from oven and push to one side of the pan. Add chicken to the other side and arrange asparagus around it.
Roast for 20–25 minutes more, until chicken is cooked through and asparagus is tender.
Serve hot and enjoy!
