A fluffy oven-baked pancake made with einkorn flour, eggs, and warm spices—topped with berries, syrup, or cream for a delicious breakfast or dessert.
4 eggs
3 Tbsp coconut sugar or maple syrup
1 tsp vanilla
2 tsp cinnamon
½ cup einkorn flour
2 Tbsp butter, melted
Pinch of salt
½ cup almond milk (or dairy-free milk of choice)
1 cup strawberries (or any berry of choice)
2 Tbsp butter
Preheat oven to 450°F.
Add all batter ingredients to a blender. Blend on low speed for ~20 seconds until smooth. Let rest in blender for 10 minutes.
While batter rests, chop strawberries.
Heat 2 Tbsp butter in a 10-inch cast iron skillet over medium heat. Once melted, add strawberries and coat well.
Pour rested batter over strawberries. Transfer skillet to oven.
Bake for 15–20 minutes, until center is set and puffed.
Remove from oven, slice, and top with maple syrup, extra berries, whipped cream, or toppings of choice.
