Soft and fluffy baked donuts made with almond or oat flour, lightly sweetened with maple syrup, and finished with a simple glaze—delicious with endless variations.
4 eggs
2 cups almond flour or oat flour
½ cup apple sauce
6 Tbsp maple syrup
2 tsp baking powder
1 tsp vanilla extract
1 tsp almond extract
½ tsp salt
Replace applesauce with ½ cup pumpkin purée
Add 2 tsp cinnamon
Add ½ tsp pumpkin pie spice
2 Tbsp butter, ghee, or coconut butter
2 Tbsp maple syrup
2 Tbsp unsweetened non-dairy milk
Preheat oven to 350°F. Spray donut pan with nonstick spray.
In a bowl, whisk eggs. Add remaining donut ingredients. Mix with a stand mixer or immersion blender until smooth.
Fill donut pans about ¾ full with batter.
Bake for 20–22 minutes.
While donuts bake, prepare glaze: melt butter/coconut butter in a small saucepan, add non-dairy milk and maple syrup. Stir until combined (mixture may look separated but will come together). Let cool.
Remove donuts from oven and allow to cool completely.
Dip cooled donuts into glaze.
Serve immediately or refrigerate to let icing harden.
