Bake the perfect homemade apple pie with a flaky crust and spiced apple filling. This classic dessert is made with wholesome ingredients for a delicious family favorite!
6 cups thinly sliced apples
3/4 cup organic sugar (sucanat, coconut, or maple sugar)
2 tbsp einkorn flour (ancient grain or GF All Purpose)
1/2 tsp cinnamon
1/2 lemon zest and juice
1 tbsp butter
2 1/2 C pastry flour (GF King Arthur All Purpose flour blend)
1 tsp salt
1/2 C + 2 Tbsp butter or coconut oil, softened
1/2-3/4 C water
Mix dry ingredients together and add butter. Mix with a fork until well combined and crumbly.
Slowly add 1/2 to 3/4 C water until consistency is reached.
Divide dough into two portions and separately roll out.
Place one crust into a well-oiled (coconut oil) glass pie dish. Set the other aside, this will be the top of layer for your pie
Bake at 350° for 10 minutes.
Let cool before adding pie filling.
Peel and slice apples thinly.
Mix together the sugar, flour, cinnamon, nutmeg, lemon zest, lemon juice, and apples in a medium bowl.
Pour the pie mixture into the prepared crust and dot chunks of butter over the filling. Cover with the second crust, crimp the edges, and cut small holes in the top of the pie shell.
Bake at 350 degrees for 5-10 minutes until golden brown.
